The association was founded in 2004 as the culmination of a collaboration for over te years between a group of chefs and restaurateurs, with the aim of creating a network of activities and promoting the traditional products and recipes of a unique territory.
The main goals that have guided the members from the beginning, even before the association was formed, are the promotion and enhancement of the Camunian agricultural products, through an active collaboration with local producers, authorities, the distribution chain and not only.
The associated restaurants to date are about thirty, spread over the whole of Valle Camonica and Sebino.

At the start of the new millennium, projects aimed at preserving local culture and products began to emerge. In the same period, also the interest in a revival of viticulture was taking shape: an essential element for the launch of a new Camunian catering. Today, even after a period of spectacularisation of the food culture, customers are finally very interested in the origin and particularity of the raw material. Valle Camonica knows how to enhance local productions and dines with locally-produced wine.
